Hand-harvested in the cool of the morning and cold-soaked a week for colour and fine tannin, then fermented with wild and selected yeasts. Pressed to French oak barriques (40% new), through natural malolactic, and matured fifteen months — tasted barrel by barrel and blended from the best.
